First I made lemonade, and next up: lemon cookies.
I used this recipe for Chewy Lemon Sugar Cookies from My Baking Addiction, with two tiny variations. I rolled them in pink sugar before baking (my pink sugar is a mix of regular sugar and ground up red sugar sprinkles), and I didn’t have enough butter on hand so I substituted ¾ cup of extra virgin olive oil for 1 cup butter. Mine came out chewy on the inside and crispy and cracked on the outside.
Verdict: delicious!
