What I’ve Been Eating: Mini Eggwiches

Mini Eggwiches: Ready

Ingredients for two eggwiches:

• 1 egg
• 2 slices cooked bacon
• 2 slider buns (these are mini ciabatta buns but you could use any kind of small bun)
• sliced cheese (my cheese was very flat so I have six small slices)
• tomatoes (a regular person could use a regular small tomato, but I’m ridiculous so I used cherry tomatoes)
not pictured: salt, pepper & butter

Preheat oven to 375°F. In a small bowl (or in my case, gravy boat) mix the egg with salt & pepper to taste.

Pour the egg mixture into muffin cups that have been either sprayed with non-stick spray OR lined with silicone baking cups, or both. Bake for 15 minutes.

Slice the tomatoes. I sliced four cherry tomatoes but I only used two.

Cut up the bacon into small, bun-length strips. Cutting bacon with a knife is a big greasy drag so I use scissors instead. We used to have a problem with our smoke detectors going off for seven thousand hours if we fried bacon, and even though the detectors have been replaced with non-malfunctioning ones, Taylor is still in the habit of buying pre-cooked microwaveable bacon.

Once the eggs have cooked through remove them from the oven. Place the buns on a small baking sheet and put them in the oven to toast up a bit, just for a minute or so, then remove and butter them.

Now it’s time to assemble your eggwiches!

Put the egg and bacon on the bottom half of the bun and the tomato and cheese on the top half, and put them back in the oven for another minute or so to melt the cheese/rewarm the bacon and egg.

Now pop the tops onto the bottoms and they are ready for snacking! Here is one I made on Saturday with havarti as well as cheddar.

Candy Land

On Saturday Sym and I paid a visit to The Candy Aisle on Robson, to buy what else but TONS and TONS of candy. I won’t even say how much I spent there; it’s embarrassing.

Sym choose some soda-flavoured Jelly Bellies and cola Mentos for herself (I think she had a theme going) and some white chocolate Reese’s Peanut Butter Cups for Taylor. I was all about BULK CANDY.

Runts!

Runts! These are great but I have the same complain as almost everybody else I know: there are never enough bananas.

PROBLEM SOLVED. Yes, you’re seeing it right; it’s like Runts but ALL BANANA.

I also got some M&Ms. I wanted to get rainbow colours but they were out of yellow!

Black, white and silver (grey). They are almost too pretty to eat but I’m sure I’ll find a way to do it.

Nicole by OPI in Virtuous Violet + Sinful Colors in Frenzy + Ever bi Lena holographic glitter

I love this glitter! It looks really purple in the bottle but it’s actually a combination of fuchsia and blue. For these nails I paired it with a metallic purple, but I want to try it with pink and blue polish to see how it looks. I added some of the holographic glitter just on the tips for a little extra sparkle.

It’s been a million years since I’ve had one of these posts! I think the last time I broke out my trusty mini donut machine
was for my tree-trimming party in mid-December! I decided to give it a comeback with some of my best donuts to date.

I made these with some box brownie mix Taylor bought a few weeks ago, made according to the package direcions. Brownie batter is thicker than cake batter so I cooked each batch for five to six minutes instead of three to four. I made the glaze with about a cup and a half of icing sugar, two and a half tablespoons of non-fat milk and the sprinkles are actually meant for ice cream!

This stuff is pretty awesome. Anyway, Sym was a BIG FAN of these, which is good because I made thirty-eight and don’t want to eat them all myself.

You may be thinking to yourself, “haven’t I already seen strawberry popsicles on this blog?” You’re right; you have. Those I made with just straight up strawberries, so they were good but not very sweet. For these I used three ingredients: water, sugar and strawberries, and OH MY GOSH ARE THEY SWEET. A bit too sweet for me, tbh, but Sym is thrilled.

I’m feeling better now. Yesterday after the riots I was so angry and upset, but after learning about all the people who came downtown with brooms and trash bags to clean up the mess, after hearing from one of my clients that the businesses that were vandalized and looted were open, and after seeing the outpouring of positivity from people who love Vancouver like I love it, well, I’m not gong to let the actions of a few pathetic losers ruin how I feel about my city.

Still the best city in the world!

The End of a Bearda

With the hockey playoffs over, there was one thing left to take care of: PLAYOFF BEARDS. Taylor started growing his beard since last September, and once the Canucks made the playoffs he stopped trimming and grooming it entirely and it really blossomed.

YIKES. Anyway he decided o shave his head along with his beard, and he did it all privately so I couldn’t see and would be confronted by an all-new husband. The results?

HOLY GEEZ. This is a face I haven’t seen in a long, long time! It’s gonna take some getting used to, but luckily I love all incarnations of Taylor equally.

A Sorry State of Affairs

I am so sad and heartbroken this morning that people would trash my city. All the pathetic rioters & looters should be ashamed of themselves, NO ONE who really loved the Canucks would treat Vancouver like that.

Another thing I need to do is take outfit pictures with my REAL camera, and also possibly during the day when there is light. Now that Taylor has organized all his camera equipment in such a way that I can get at his tripod without knocked a ton of stuff down on my head that should be doable. Realistically I should just be able to ask him to take pictures for me using all his fancy camera equipment but for some reason I always look like a C.H.U.D. when he photographs me. I BLAME HIM.
